You’ll need your two-cup liquid pyrex measuring cup and a mini-whisk (if you have one -or- a fork works in a pinch!) I like to use the two-cup measure because as you’ll see, there is over a cup of dressing in this recipe and when it comes time to whisk it together, it’s nice to have a little extra room for splashes in the measuring cup.
Next, add 3/4 of your favorite extra virgin olive oil.
After that, add 1/4 cup of your favorite balsamic or red wine vinegar. I switch back and forth between the two, it makes for a very different tasting dressing dependent upon which vinegar you use.
Add 2 Tablespoons of Honey
Add 2 Tablespoons of minced Garlic. I have been known to use garlic paste as well. It makes for a smoother dressing, but of course it is completely dependent upon what I find waiting in the fridge or kitchen pantry!
Next, 1 Teaspoon of Sea Salt
Whisk (or use your fork!) in quite a vigorous manner until the dressing has emulsified. Once it’s ready, dip a piece of lettuce into the dressing and taste for seasoning. At this point you may want to add a pinch more salt, but it’s unlikely.
