Good Morning Muffins
1 Cup whole wheat flour
3/4 Cup unbleached white flour
2 Teaspoons baking powder
1 Teaspoon baking soda
1/2 teaspoon salt (sea salt is preferred)
1/2 Cup applesauce
1 Cup whole fat organic milk
1/4 Cup canola oil
1/2 Cup All Fruit Jam -OR- you can add another 1/2 Cup of the applesauce instead!
1 Teaspoon vanilla extract
Two 4.5 oz packages of fresh blueberries
A heaping handful of shredded coconut
Let’s get started:
Sift the dry ingredients into a large bowl.
Rinse the blueberries – be careful to remove any stems, leaves or soft and unsavory berries. Toss the wet blueberries directly into the dry ingredients. Let the flour coat the berries. It will stop them from bursting and turing the entire muffin blue.
Fill each silpat muffin cup almost to the brim.
